Chicken Souvlaki with Tzatziki Sauce
Souvlaki is Greek street food at its finest, and the secret is in the marinade. Tender chunks of chicken, skewered and grilled until charred at the edges and juicy in the middle. It's simple, it's satisfying, and once you nail the marinade, you'll want to put it on everything. Tzatziki is the cool, creamy Greek sauce that makes everything better. Strained yogurt, fresh cucumber, garlic, lemon, and dill. It's bright, refreshing, and dead simple to make. Serve it alongside the souvlaki and watch it disappear faster than the chicken.
SOUVLAKI CHICKEN
Ingredients

2 lbs Chicken Thighs Or Breast

2 tbsp Mustard

2 tbsp Red Vinegar

1 tbsp Oregano

2 tbsp Olive Oil

0.5 tbsp Salt

0.5 tbsp Black Pepper

2 cloves Garlic

Cube your chicken into evenly sized pieces and set aside.

Add all your marinade ingredients together and mix well.

Toss the chicken in the marinade until everything is well coated. Let it sit in the fridge for at least 30 minutes. But if you can leave it overnight, do it. The longer the better.

Thread the marinated chicken onto skewers and cook on a grill or ridged cast iron for the best char and flavor. No grill? No problem. A stovetop pan works fine, or you can roast them in the oven at 400°F for 20–25 minutes until cooked through.
TZATZIKI SAUCE

1 cup Full Fat Greek Yogurt

2 Cucumber

As desired Rosemary

1 tbsp Red Vinegar

2 tbsp Olive Oil

1 clove Garlic
Method

Grate the cucumber using a box grater, then squeeze out as much liquid as you can with your hands or a clean kitchen towel. This is key, otherwise your tzatziki will be watery.

Add the grated cucumber to a bowl along with the rest of your ingredients and mix everything together until well combined.

Taste and adjust. A little more lemon, salt, or garlic goes a long way. Cover and let it sit in the fridge for at least 15 minutes before serving so the flavors can come together.
